Peppermint Bark Hot Chocolate Recipe

Let me begin by saying I am not a baker OR I didn’t think I was. For any of you who may feel this way this recipe may give you hope!

The holidays are surrounded by good food, drinks and most importantly-sweet treats. Today, I was in the mood for hot chocolate with this insanely cold weather we are having in Louisiana.

I have been looking up healthy alternative recipes for peppermint bark, as it is one snack I have to treat myself to during the holidays. Craving both hot chocolate and peppermint bark, I decided to put them together.

I found this pretty awesome recipe for “skinny peppermint bark” (is there really such a thing)? I’m here to say, “YES”! Sharing the alternative recipe I used (and made into my own) with you below! Here it goes!

Chocolate Layer:

Mix 6 TBSP of coconut oil, 1 tsp of peppermint extract, 2 truvia sweetener packets, a pinch of sea salt, and 1 1/4 TBSP of organic cocoa powder in a small mixing bowl. Mix until smooth consistency.

Take wax paper and line 8X8 baking pan. Pour chocolate layer into pan and spread until thin. Place in freezer for 10 minutes.

White Layer:

Repeat step above with white layer, leaving out the cocoa powder.

Mix 6 TBSP of coconut oil, 1 tsp of peppermint extract, 2 truvia sweetener packets, and a pinch of sea salt, in a small mixing bowl. Mix until smooth consistency.

Pour white layer into pan above cocoa layer and spread until thin. Sprinkle crushed peppermint on top. Place in freezer for 10 minutes.

Hot Chocolate Recipe:

While the peppermint bark is hardening…

Mix 1 TBSP organic cocoa powder, 1 cup coconut milk, and 1/2 truvia sweetener packet in a small pot. Place stovetop on low heat until desired temperature is met.

Pour hot chocolate in a festive mug, place a pillow of marshmallows in mug, pop in a candy cane and place peppermint bark on top of marshmallows.

Enjoy nibbling your bark whole drinking your hot cocoa!
